Recipe: Caramel Banana Cake



Ingredients:

For the Banana:
  • 3 ripe bananas (peeled and mashed)
  • 1 tsp lemon juice
For the Caramel:
  • 1/2 cup brown sugar
  • 1/4 cup butter
  • 1/4 cup heavy cream
  • 1/2 tsp vanilla extract
For the Cake:
  • 1 1/2 cups flour
  • 1/2 cup white sugar
  • 1/4 cup brown sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup butter (room temperature)
  • 2 eggs
  • 1/2 cup milk
  • 1 tsp vanilla extract

Instructions:

  1. Prepare the Banana:

    • In a small bowl, mash the bananas and add the lemon juice to prevent browning. Set aside.
  2. Prepare the Caramel:

    • In a saucepan over medium heat, let the brown sugar melt until it turns golden.
    • Add the butter and stir until fully melted.
    • Add the heavy cream and vanilla extract, mixing until the caramel becomes smooth and thick.
    • Let it cool slightly.
  3. Prepare the Cake:

    • Preheat the oven to 180°C (350°F) and grease or line a cake pan with parchment paper.
    • In a large bowl, beat the butter with the white and brown sugars until light and creamy.
    • Add the eggs one at a time, beating well after each addition.
    • Stir in the mashed bananas.
    • In a separate bowl, mix the flour with the baking powder, baking soda, and salt.
    • Gradually add the dry ingredients to the wet ingredients, alternating with the milk, mixing on low speed until smooth.
    • Pour the cake batter into the prepared pan and spread it evenly.
  4. Baking:

    • Bake the cake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  5. Serving:

    • Once the cake has cooled slightly, pour the caramel over it and optionally decorate with more banana slices.
    • Serve the cake warm or at room temperature.
