Recipe: Caramel Banana Cake
Ingredients:
For the Banana:
- 3 ripe bananas (peeled and mashed)
- 1 tsp lemon juice
For the Caramel:
- 1/2 cup brown sugar
- 1/4 cup butter
- 1/4 cup heavy cream
- 1/2 tsp vanilla extract
For the Cake:
- 1 1/2 cups flour
- 1/2 cup white sugar
- 1/4 cup brown sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup butter (room temperature)
- 2 eggs
- 1/2 cup milk
- 1 tsp vanilla extract

Prepare the Banana:
- In a small bowl, mash the bananas and add the lemon juice to prevent browning. Set aside.

Prepare the Caramel:
- In a saucepan over medium heat, let the brown sugar melt until it turns golden.
- Add the butter and stir until fully melted.
- Add the heavy cream and vanilla extract, mixing until the caramel becomes smooth and thick.
- Let it cool slightly.

Prepare the Cake:
- Preheat the oven to 180°C (350°F) and grease or line a cake pan with parchment paper.
- In a large bowl, beat the butter with the white and brown sugars until light and creamy.
- Add the eggs one at a time, beating well after each addition.
- Stir in the mashed bananas.
- In a separate bowl, mix the flour with the baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, mixing on low speed until smooth.
- Pour the cake batter into the prepared pan and spread it evenly.

Baking:
- Bake the cake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Serving:
- Once the cake has cooled slightly, pour the caramel over it and optionally decorate with more banana slices.
- Serve the cake warm or at room temperature.
