Ingredients:
- 1 cup quinoa
- 2 cups water or vegetable broth
- 1 red bell pepper, sliced
- 1 zucchini, sliced
- 1 carrot, thinly sliced
- 1/2 eggplant, cubed

- 1/2 tsp black pepper

Prepare the Quinoa:
- Rinse the quinoa thoroughly under cold water to remove its natural soap-like coating.
- In a pot, combine the quinoa with water or vegetable broth and bring it to a boil.
- Once it boils, reduce the heat, cover the pot, and let it cook for 12-15 minutes, or until the liquid is absorbed.
- Remove the quinoa from heat and let it rest.
