Recipe: Quinoa with Roasted Vegetables for Weight Loss



Ingredients:

  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 1 carrot, thinly sliced
  • 1/2 eggplant, cubed
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp Italian seasoning or thyme
  • Juice of 1 lemon
  • A sprinkle of pomegranate seeds or pine nuts (optional, for garnish)
  • Fresh basil leaves (optional, for garnish)

Instructions:

  1. Prepare the Quinoa:

    • Rinse the quinoa thoroughly under cold water to remove its natural soap-like coating.
    • In a pot, combine the quinoa with water or vegetable broth and bring it to a boil.
    • Once it boils, reduce the heat, cover the pot, and let it cook for 12-15 minutes, or until the liquid is absorbed.
    • Remove the quinoa from heat and let it rest.
  2. Prepare the Roasted Vegetables:

    • Preheat the oven to 200°C (400°F).
    • In a bowl, toss the sliced vegetables with olive oil, salt, black pepper, and Italian seasoning or thyme.
    • Spread the vegetables in a single layer on a baking sheet and roast in the oven for 20-25 minutes, or until they are tender and charred.
  3. Assemble the Dish:

    • In a large bowl, combine the cooked quinoa with the roasted vegetables.
    • Add the lemon juice and toss to combine.
  4. Serve:

    • Garnish with pomegranate seeds or pine nuts and fresh basil leaves if desired.
    • Serve the quinoa with roasted vegetables warm or at room temperature.
