Recipe: Spanish Tortilla with Pesto
Ingredients:
- 4 eggs
- 3 medium potatoes (peeled and thinly sliced)
- 1 medium onion, finely chopped
- 2 tbsp olive oil
- 1/4 cup pesto sauce
- 1/4 cup grated Parmesan cheese
- A pinch of salt and black pepper
- 1/4 cup chopped parsley (for garnish)

Prepare the Potatoes and Onion:
- Heat olive oil in a large non-stick skillet.
- Add the potato slices and chopped onion. Cook over medium heat, stirring occasionally, until the potatoes are tender and the onion is translucent.

Prepare the Egg Mixture:
- In a bowl, beat the eggs thoroughly. Add the pesto sauce, Parmesan cheese, and a pinch of salt and pepper.

Combine the Ingredients:
- Add the cooked potatoes and onion to the egg mixture, stirring gently to combine.

Cook the Tortilla:
- Heat a little oil in the same skillet and pour in the tortilla mixture.
- Cook over medium-low heat for 8-10 minutes, or until the bottom is set.
- Flip the tortilla using a flat plate, then return it to the skillet to cook the other side for an additional 5 minutes.

- Garnish with chopped parsley and serve warm or at room temperature.
