Recipe: Spanish Tortilla with Pesto



Ingredients:

  • 4 eggs
  • 3 medium potatoes (peeled and thinly sliced)
  • 1 medium onion, finely chopped
  • 2 tbsp olive oil
  • 1/4 cup pesto sauce
  • 1/4 cup grated Parmesan cheese
  • A pinch of salt and black pepper
  • 1/4 cup chopped parsley (for garnish)

Instructions:

  1. Prepare the Potatoes and Onion:

    • Heat olive oil in a large non-stick skillet.
    • Add the potato slices and chopped onion. Cook over medium heat, stirring occasionally, until the potatoes are tender and the onion is translucent.
  2. Prepare the Egg Mixture:

    • In a bowl, beat the eggs thoroughly. Add the pesto sauce, Parmesan cheese, and a pinch of salt and pepper.
  3. Combine the Ingredients:

    • Add the cooked potatoes and onion to the egg mixture, stirring gently to combine.
  4. Cook the Tortilla:

    • Heat a little oil in the same skillet and pour in the tortilla mixture.
    • Cook over medium-low heat for 8-10 minutes, or until the bottom is set.
    • Flip the tortilla using a flat plate, then return it to the skillet to cook the other side for an additional 5 minutes.
  5. Serve:

    • Garnish with chopped parsley and serve warm or at room temperature.
